Hello,
Im new to Linux and Im Dualbooting Windows 11 and Linux. As filesystem of Linux I use ext4 and the partition is not encrypted. I want to know if it is save in terms of privacy when I use Linux. Does Microsoft have any access to my data on the Linux partition? Or is anything send to Microsoft when I use the Linux OS? I want nothing to do with Microsoft when Im on the Linux OS. Is Dualbooting save for those aspects, because otherwise I would delete my Windows partition and use only Linux?

No problem, as long Windows is not running, MS does not see your computer.
Welcome to Linux !
Cheers,
Eddy

Welcome to the forums,
you can use your Linux installation to read/write/amend your documents and pictures in W10 as Linux can read the Windows file system.
On the other hand, windows cannot access any files on Linux as it cannot read Ext4,
Your computer will treat each OS as a separate entity, so if you are logged into Linux the W10 is dormant and vice versa

OH! and I forgot to add, once you're happy with your Linux installation, do not forget to set up a recovery system [time shift or similar]

Yeah I know timeshift from Linux Mint. Now I use Endeavouros and couldnt find timeshift. Can you recommend a recovery system? BTRFS?
