I second the 7800 XT, it has great support in Linux nowadays with recent kernels and mesa.
It plays any games I want to play at 1440p with no issues on max or near-max (CP 2077 with Ray Tracing (Medium Reflections and no Path Tracing)) settings, but I have my system set up to receive updates for Kernel and Mesa ASAP.
I have Sapphire's Pulse model of the 7800 XT myself.
