On windows I'm able to use the discord sound input and output on my headset connected on the notebook's audio jack while other audios on my speakers, connected on my monitor.

On linux mint I was able to, but since I've installed the 20.1 version I can't select a different output device than the one that is set on my audio config.

Any tips on how can I solve this?

did you install via snap package or deb file?
When you click on the speaker and bring up the audio mixer what is being shown in the Output Devices
