-pop-os use nouveau control driver NVIDIA or anything else ????

yeah. but example : debian use nouvea control driver Nvidia.

Don't know about PopOS.
But worst case, you can download from nVidia.
Most of the newer release Linux's (rolling releases) like Ubuntu and Fedora
come with nouveau because it's open source.

However the drivers you download directly from nVidia are not open source.
Ubuntu and Fedora have additional repo's you can enable to download these
binaries as well. (But you don't get the source code)

Video performance on Linux is just as good as windows in most situations, sometimes better.
 
You go to the Pop Shop available nvidia Drivers should be listed there.
