You mean you want to remaster Mint's .iso file? Read here https://www.915tx.com/remaster
BTW, there's a LXDE German version of Mint https://sourceforge.net/projects/linuxmintdeutsch/files/unofficial/19.3/
To change the language used at boot, when the system starts up, press Enter > Tab, and Change the strings "locales=de_DE" to "locales=en_US" and "layoutcode=de" to "layoutcode=en" or whatever your language is, then press Enter to start the system. You could use that one as a base for your project.

What do you mean? Did you read the link on how to remaster an .iso file? You probably need to read here too to get some understanding on how a Linux distro is assembled https://www.linuxfromscratch.org/lfs/view/stable/
If your question is how to replace the Firefox package in Mint for Brave's, then you need to remove/uninstall FF and install Brave. Remastering a distro's .iso isn't a trivial task, and you need to read and understand how that process works.
