So with the above you can not only boot Mint up to install but also have the additional benefit of being able to install software (limited by 1gig .img) which persists after shutdown which now allows users to use Mint if they want as an alternative to knoppix to use as a fix/utility tool

Mint works with UEFI, but not with secure boot. Flashing a ISO with target UEFI and GPT partition table should boot in a UEFI system, although you would have to disable Secure Boot for mint specifically. Although that wouldn’t interfere with the USB booting, just with the unsigned firmware packages.

I’ve never used ventoy, so I can’t tell what the problem would be.

@gvisoc yes thats a better clarification . On ventoy it supports secure boot or secure boot disabled.

USB not booting
If the USB isn't booting, you need to make sure: That the USB is bootable. That you can either select the USB from the Boot Device list or configure BIOS/UEFI to always boot from a USB drive and then from the hard disk.
