Vnc breaks when the hosts display turns off

Hi all, I'm fairly new to Linux. I have managed to get my home server running fairly smoothly but there are a couple problems that probably boil down to me not understanding xorg & x11 at all. Regardless, does anyone know good overview with examples I could learn from?

The server is running Ubuntu 18.04 with built-in desktop sharing turned on. It is connected to a TV which is used for other things during the day. It works fine as long as the TV on.

As far as I can tell when it senses the TV go off it resizes to 800x600 or something, which makes my vlc session almost completely unusable. xrandr just says it can't connect to a display so I don't know what to try?

Any ideas on an easy way to fix this?
