In Ubuntu? I'm only guessing, but you may be looking at an option to run Gnome under X.org versus Wayland. I think Ubuntu is transitioning toward Wayland. Gnome itself, the Desktop Environment, is probably the same, as far as you would notice. Again, just guessing.
Yup, xorg vs wayland. Xorg is over 25 years old. Made up of lots of small pieces that were added over the years. Wayland tries to put it all back together in a simpler (more efficient) way.
