It's in the Epson ET-2710 series.

Does the ET-2710 appear?

I'm running the same LinuxMint version as you, so you must be missing a package.

Did you install both of these packages?
epson-inkjet-printer-escpr_1.7.7-1lsb3.2_amd64.deb epson-printer-utility_1.1.1-1lsb3.2_amd64.deb
Ah OK....the 1.7.7 file was not installed. So I've chosen the ET-2710 and completed the set up but when I try and print nothing happens. When I look at the printer job queue it shows the job but stays on status "processing". Thanks for helping by the way. Any thoughts on this final hurdle?

Have you set the Page Size? Some printers have the American size by default - Letter. I assume you use A4 instead.

Try looking in this log file( /var/log/cups/error_log) to see if you see any useful information there about your print job.

Before you do this first try to print a test page instead of the document you are trying to print.
And what happens then?

Let's try something different.
1. Delete the printer
2. copy this file: /opt/epson-inkjet-printer-escpr/ppds/Epson/Epson-ET-2710_Series-epson-inkjet-printer-escpr.ppd.gz to your home directory.
3. extract it.
4. Go to Printers and Add printer
5. Select Epson Inkjet
6. Select the radio button: Provide PPD File
7. Select the file you extracted, Click Forward, then Apply
8. Printer should be installed. Try printing again.

OK did all that and tried to print the test page, the behavior is the same, just stays on "processing".

Printer works fine from my phone and Windows on same computer and other computers. Baffling. You know I have the Epson ET-2711 yeah? You think the 2710 driver should be fine?

I recommended the ET-2710 driver because on the EPSON Download center I couldn't find the ET-2711 driver, so then the 2710 should do because basically the series. Do you have the option to contact EPSON. Try removing the printer again and adding it this way.

1. Open a web browser
2. Go to: http://localhost:631/admin
3. login with your user and password(should be the same as your login user account)
4. Select Epson Inkjet
5. Click Continue
6. give it a name click continue
7. Find your printer in the list and click add
8. Then Click: Set default options
9. Then try printing again.

Als check the error.log file for if it fails again.
Just do it via the menu this time. Remove printer, Then you could try one of the other printers in the series: ET-2700, ET-2720, ET-2750, ET-2760.

I'm kind of running out of ideas since there is not much else to go on. This is probably what the issues is:
